I agree it is a balance. You don't want a plate where the food has been just slopped on to it as it gives you a sense of lack of value, if the chef has spent hours preparing sauces and marinades and particular cuts of meat, they have a lot of vested time and effort in the dish and it reflects deeply on their pride in their profession. A well plated dish should make your eyes light up and start those digestive juices flowing in anticipation of a gourmet delight. Savor the flavor!
